GROWING & MAKING: Shiraz from a dry, rocky site out the back of Boyup Brook. Hot days and cool nights help to concentrate flavour and aroma as the small grapes are packed bursting with spice and flavour. Fermented in an open vat, hand plunged, basket pressed and matured in French oak for 14 months. This wine is dark and brooding, with liquorice, star anise and blackberry flavours. Labelled as Shiraz, rather than Syrah to reflect the wine’s ripe fruit and full-bodied lushness.
Unfined, unfiltered; minimal mucking about. Vegan.
