Sauvignon Blanc fermented using carbonic maceration. Spicey and savoury, full of exotic flavours and textures. Think ginger, camomile and nashi pears; it’s different, but delightful.

GROWING & MAKING:  Hand-picked bunches of Cowaramup Sauvignon Blanc left whole and fermented under a layer of carbon dioxide for two weeks. This process called carbonic maceration, is used for red wine, but very rarely for whites.  The resulting wine is packed with zesty Sauvignon Blanc flavours, but is also accompanied by plenty of spicey, savoury notes.  Limited to twenty dozen, this is a super unique wine that is as delicious as it is interesting. 

Unfined, unfiltered; minimal mucking about. Vegan.
