Single Vineyard Sauvignon Blanc 2023
This is our attempt to make a serious Sauvignon Blanc. Complex, textural, savoury, with fruit power and drive.
GROWING & MAKING: Handpicked, organic Sauvignon Blanc grapes from a little vineyard near Cowaramup. Low yields in 2023 resulted in super concentrated and full flavoured fruit. The majority of the grapes were gently whole bunch pressed and fermented in older oak using wild yeast. About 20%, was fermented on skins for two weeks before being pressed to add spicy, ginger aromas, alongside texture and mouthfeel, to the final blend. This is serious Sav Blanc. A handmade wine packed with flavour and complexity; long, sophisticated and balanced.
Unfined, unfiltered; minimal mucking about. Vegan.
